We have stuck to a traditional method of rolling out dough using our fingertips. Without using oil, we have utilized a method of handmade udon (noodles) in the process of udon making and brought out a real taste of udon itself. This udon is unique in textures. It is sticky, elastic and its texture is mild like a rice cake. As this udon slides down your throat easily, you will slurp up udon smoothly.

This udon can be enjoyed throughout the year as warm udon in winter and cold udon in summer. You can enjoy this udon in various eating styles such as Zaru-Udon (cold udon topped with sliced dried seaweed) and Kake-Udon (plain udon without any trimmings).

We have focused on a method of udon making. We roll out dough without using tools. Kaizuya’s Himi Udon is made based on the handmade method. That traditional method and technique were born in Noto, Ishikawa Prefecture and have been passed on to us. We will deliver our wonderful udon with good taste made by such excellent technique to you.
