    Matsunami sugar syrup has 500-year history in Matsunami district of Noto town, Ishikawa, having been passed down from generation to generation. Today there is only one producer left, Yokoi Shoten, preserving the techniques of this all hand-made traditional syrup of rice and barely. Obviously with no preservatives and additives used, this rice syrup is winning supports from health-consious people.
    Passion for production and ingredients
    Put the ground powder of sprouted barely (called Oyashi) into steamed rice and let it stand overnight for saccharification. It is a useful natural-sweetener when more and more people choose to cook without sugar.
